For the past month I have had a really hard time cooking. Since being pregnant, I have been experiencing morning sickness just about everyday, and all I want to do is be all snuggled up in my bed.
But on the other hand, I miss cooking SO MUCH!
Most days I will lie in bed dreaming of making delicious foods. Thinking of all of the things I want to eat, and how I would make them. But then at the same time, the thought of making food is exhausting. And honestly, a personal chef isn’t sounding so bad right now.
So I have had to compromise.
And honestly, taking a break from the things you love isn’t always a bad thing. I know that once I start feeling better and cooking regularly, I will appreciate it 10 times more.
What I have found to be helpful, are easy-to-make dinners.
One of the cures for morning sickness is food, but in order to eat, I need to cook. See my dilemma?
Recently I have tried to have things on hand that don’t take a lot of effort. That way I will have the energy to make a simple dinner.
Sandwiches, crackers, baked sweet potatoes, and lara bars have been my best friend.
I’m hoping the morning sickness will be over with soon, but until then these easy recipes will have to do 🙂
- thinly sliced beef
- gf bread
- Thinly slice onions and tomatoes. Spread hummus on the inside of both pieces of bread.
- In a skillet, lay desired amount of meat flat. Cook on high for about 30 seconds, then flip for an additional 15 seconds.
- Layer meat, onions, tomatoes, and lettuce on one of the pieces of bread. Place the second piece of bread on top and serve!
