Cooking for the holidays is exhausting.
I feel like I’m running a marathon. But instead of running I’m cooking, and eating… okay it’s not at all like a marathon…
If food could magically appear on the dinner table every night, then my life would be a dream.
But unfortunately it doesn’t quite work like that.
What usually ends up happening, is I wait till I get home from work – at 10pm – and hope there is something easy to make waiting for me in the cupboard. And if that doesn’t work, then Eli and I will head to the store.
Since Eli has a hard time with cow’s milk, frozen pizzas aren’t really an option. Even if they are gluten free, there is almost always cheese on them, and cheese is what he has the hardest time with.
If someone out there wants to make a delicious gluten & dairy free pizza, I would totally buy it! But that day hasn’t quite come, at least not at our local grocery store.
I can’t complain too much though, because making food fresh is always better. And I have a husband who makes yummy food for me when I’m too tired.
This week, he made this amazing garlic and herb cheesy bread in 15 minutes! I felt I had to share this with you since it is so good, and honestly so easy to put together!
We bought the flatbread in the frozen section of QFC, the brand was Kinnikinnick. Like I said, it was late at night, and although I have a killer gf flatbread recipe, it wasn’t going to happen that night.
This bread blew my mind.
I thought it kind of looked like cardboard based on the picture on the box, but I trusted Eli.
I was wrong. REALLY wrong.
This flatbread is so doughy and soft after you bake it!
Although it doesn’t beat fresh baked bread, it was pretty good for being gluten & dairy free, and frozen. Who would have thought?
The thing I love about finds like this, is they are so easy to throw together last minute when you are having guests over, or you could totally transform this recipe into an amazing pizza recipe.
You can never go wrong with flatbread.
There are a few different types of pre-made gf flatbreads I have tried. This one is my favorite so far. Most of the others I have tried were not frozen, and were stale.
If you are still new to the gluten free world, or don’t have time to make your own flatbread, I would highly recommend using this brand.
Sometimes it is nice to have a head start on making dinner.
I will say though, pretty much any gluten free product you buy usually is just made up of rice flour and starches. There isn’t a whole lot of food value to them. And just because they are gluten free, they aren’t much healthier for you than any other white breads.
If you want quality and have the time, I would say it’s best to make your own. But I do understand it takes time making everything on your own, and sometimes it is nice to have a break.
- 2 Kinnikinnick Foods pizza crust
- 2-4oz goat cheese
- olive oil
- 3-4 cloves garlic
- Preheat oven to 350°F.
- Place the flat bread on a baking sheet and lightly glaze with olive oil. Sprinkle on the goat cheese, chopped garlic, rosemary, marjoram, and salt.
- Bake for about 10 minutes at 350°F.
