Sometimes the best thing you can get for Christmas is candy.
Even when you’re an adult.
I remember growing up making a plate of cookies and bars for the neighbors. My mom and I would spend hours in the kitchen.
Even though we always put so much time and effort into baking, and usually didn’t get anything in return, we had so much fun doing it.
There is something so special about being able to give someone your time. Anyone can go and buy cookies and treats from the store, but when it comes from someone they know, it means so much more.
And not to mention, homemade treats are always better. Especially when the cookies first come out of the oven.
I know I have never had a lot of money, and buying people gifts was never my strong point. But I love to make things for people that I know they will enjoy.
This year I had a few treats in mind that I wanted to try out. I needed a good excuse to make a ton of different desserts and not get sucked into eating them all – yes I LOVE chocolate.
I like to be able to replace refined sugars as much as possible. I’ve also been obsessed with dates, who would have thought they would be so yummy?
So here’s a breakdown of went into these chocolates:
Chocolate chips – sweet and chocolatey outer shell
Dates – tastes like caramel
Pecan butter – smooth and nutty filling
If you don’t know how to bake, but want something to give this holiday season, these chocolates will be the perfect treat.
- 28 pitted dates
- 1-3 cups pecans
- 2 cups chocolate chips
- In a food processor, blend the pecans until they turn into a nice creamy butter.
- Fill each of the dates with about a tsp of pecan butter.
- In a double boiler, or a microwave, melt 2 cups chocolate. Transfer to a bowl, and individually roll the dates in the melted chocolate.
- Place the chocolates on a piece of parchment paper, and refrigerate until hard.
