This year for Thanksgiving, we headed over to Eastern Washington to visit Eli’s family. We got to hang out on their farm for a couple days and play with baby goats. I had a blast!
Since we were going to be out of town on Thanksgiving, we had a pre Thanksgiving dinner.
Let me tell you, the food was so good!
I had a lot of fun getting to plan the menu.
And since there was only four of us, we opted for lamb over turkey. It was so tasty and way less of a hassle.
Eli first cooked the lamb in a skillet on the stove with salt and pepper. He then moved the lamb to a baking sheet, and baked until fully cooked. In the skillet, he sautéed some garlic and arugula to put on the lamb.
To add some greens, I roasted some brussel sprouts in the oven. To prepare them, I cut the stems off, and then drizzled with some olive oil and seasoned with salt and pepper.
As a side, I made my scalloped potatoes. They were the perfect addition to this meal. The coconut milk makes them so creamy.
Eli’s mom brought a chocolate flax cake from flax4life. We also really love their mini flax brownies.
And then as a last minute side, I chopped up some pears and sprinkled a little sugar, crushed pecans, nutmeg, and cinnamon on top. I let them bake at 350°F until they were soft.
All in all, the dinner was AMAZING! We had a lot of fun getting to hang out and play some board games afterwards.
Good food is so much better when you get to share it with people.
